Fall Time! Perfect for Pumpkin Spice Brownie Cupcakes

We ran out of sweets the other evening and I whipped these up. So very delicious; they were not too rich or too sweet. Paired great with a spiced buttercream icing. I was able to use some cupcake decorative boxes from the Martha Stewart line to dress them up for the school cake walk.

Ingredients:

  1. 1 cup chocolate chips (I prefer dark chocolate by Ghirardelli)
  2. 1/2 cup butter (1 stick)
  3. 3/4 cup sugar
  4. 3 eggs
  5. 1 teaspoon vanilla extract
  6. 1 1/4 cups all purpose flour
  7. 3 tablespoons unsweetened cocoa
  8. 1 teaspoon baking powder
  9. Dash of salt
  10. Can of pumpkin puree
  11. 2 tablespoons of cinnamon

 

  1. 1) Preheat oven to 350 degrees
  2. 2) Melt chocolate and butter over low heat, stirring constantly until completely melted. Pour into bowl.
  3. 3) Mix in eggs and vanilla. Beat until well blended.
  4. 4) Stir in flour, cocoa, baking powder and salt. Blend well
  5. 5) Stir in pumpkin puree and cinnamon
  6. 6) Pour into lined cupcake trays till 4/5 of the way full. (remember, brownies don’t rise as much as cake)
  7. 7) Bake for 15-20 minutes or until wooden toothpick inserted in center comes out clean.
  8. 8) Frost or eat plain!
